Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 4 cups (480g) powdered sugar
  • 3 tablespoons meringue powder
  • 6 tablespoons warm water (plus more as needed)
  • Gel food coloring (black, orange, purple)
  • ½ teaspoon vanilla extract (optional, for icing)
  • Black sanding sugar or black sprinkles (optional)
  • Edible glitter spray (optional)

Instructions

  1. Make the cookie dough: In a stand mixer with paddle attachment, cream butter and sugar on medium speed until light and fluffy, about 3 minutes. Add egg and vanilla, beat until combined. In a separate bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet mixture on low speed, mixing just until dough comes together.
  2. Chill the dough: Divide dough in half, flatten into 1-inch thick disks, wrap in plastic wrap, and refrigerate for at least 2 hours (up to 3 days). Can be frozen for up to 3 months.
  3. Roll and cut cookies: Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone mats. Roll dough to ¼-inch thickness on a lightly floured surface. Cut into rounds using a 2.5-3 inch cookie cutter. Place 2 inches apart on prepared sheets. Bake 8-10 minutes, rotating pans halfway. Cool on sheet 5 minutes, then transfer to wire rack to cool completely.
  4. Make royal icing: In stand mixer with whisk attachment, combine powdered sugar and meringue powder. Add 6 tablespoons warm water and vanilla. Mix on low, then beat on medium-high 4-5 minutes until thick, glossy, and holds stiff peaks. Adjust consistency with water or powdered sugar as needed.
  5. Color and thin icing: Divide icing into bowls for base color (e.g., orange) and web color (e.g., black). Thin base icing to flood consistency (like thick maple syrup). Keep web icing at pipe consistency (thick enough to hold shape).
  6. Decorate cookies: Pipe base icing outline on each cookie, then fill center. Use toothpick to spread and pop bubbles. Let set 15-20 minutes until tacky. Pipe a small dot of web color in center, then concentric rings ¼ inch apart. Drag toothpick from center outward through rings to create web spokes. Wipe toothpick clean between drags. Add sprinkles if desired.
  7. Let icing set: Allow decorated cookies to dry completely at room temperature, uncovered, for 4-6 hours or overnight until hard to the touch.

Notes

Don’t skip chilling the dough—it prevents spreading. Use a kitchen scale for accurate flour measurement. Keep web icing thick to avoid bleeding. Work in small batches when decorating. Let base icing set 15-20 minutes before piping web. Cookies stay fresh at room temperature for up to 10 days in an airtight container. Undecorated baked cookies can be frozen for up to 3 months.
