Wholesome Fall Harvest Grain Bowl: 5-Step Easy Recipe

A comforting and wholesome grain bowl featuring chewy farro or quinoa, roasted butternut squash and Brussels sprouts, and a creamy tahini-lemon dressing. This easy, vegetarian recipe is perfect for busy weeknights or meal prep.

  • 1 cup dry farro or quinoa
  • 2 to 2.5 cups water or vegetable broth
  • Pinch of salt (for grains)
  • 1 medium butternut squash, peeled and cubed
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 medium red onion, sliced into half-moons
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/3 cup tahini paste
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon maple syrup
  • 1 clove garlic, minced
  • 2 to 4 tablespoons warm water
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube the butternut squash, trim and halve the Brussels sprouts, and slice the red onion. Place all vegetables on a large rimmed baking sheet.
  3. Drizzle vegetables with olive oil and sprinkle with dried thyme, garlic powder, salt, and pepper. Toss to coat evenly and spread in a single layer.
  4. Roast vegetables for 20 minutes, stir, then roast for another 15-20 minutes until squash is tender and sprouts are crispy. Total roasting time is about 40 minutes.
  5. While vegetables roast, rinse grains. Combine grains, water/broth, and a pinch of salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer. Farro takes 30-40 minutes; quinoa takes 15 minutes. Let sit covered for 5 minutes, then fluff with a fork.
  6. In a small bowl, whisk together tahini, lemon juice, maple syrup, minced garlic, and salt. Gradually add warm water while whisking until the dressing is smooth and pourable. Adjust seasoning to taste.
  7. Divide warm grains among serving bowls. Top with roasted vegetables and drizzle generously with tahini dressing. Serve immediately.

Notes

For meal prep, assemble bowls without dressing just before eating to prevent sogginess. The dressing can be stored separately for up to 5 days. Ensure vegetables are not overcrowded on the pan to allow for proper roasting rather than steaming. Use warm water for the dressing to prevent the tahini from seizing.
