Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a large mixing bowl, mash the 3 ripe bananas thoroughly until mostly smooth with a few lumps remaining.
  3. Add the melted butter and brown sugar to the mashed bananas and stir until combined.
  4. Mix in the eggs and vanilla extract until the batter is glossy and uniform.
  5. In a separate bowl or sift directly over the wet mixture, combine the flour, baking soda, salt, and cinnamon if using.
  6. Gently fold the dry ingredients into the wet banana mixture until no dry flour patches remain. Avoid overmixing.
  7. Fold in the chocolate chips and nuts if desired, distributing evenly.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes, starting to check doneness at 55 minutes by inserting a toothpick into the center. It should come out with a few moist crumbs but no raw batter. Tent with foil if the top browns too quickly.
  10. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
