This is the ultimate creamy Buffalo chicken dip, perfected over years of Sunday games and backyard barbecues. It’s a warm, velvety, and perfectly balanced dip that’s guaranteed to be the first thing to disappear at any gathering.

  • 3 cups cooked chicken, shredded or chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1 1/2 cups shredded cheddar or Monterey Jack cheese, divided
  • 1 tablespoon butter, melted
  • Optional: chopped green onions, crumbled blue cheese, extra hot sauce for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8 baking dish.
  2. In a large mixing bowl, beat softened cream cheese, sour cream, and ranch dressing with a hand mixer until smooth and fluffy (about 2 minutes).
  3. Mix in Frank’s RedHot sauce and melted butter on low speed until combined.
  4. Fold in shredded chicken and 1 cup of shredded cheese until evenly distributed.
  5. Transfer mixture to prepared baking dish and spread evenly. Sprinkle remaining 1/2 cup cheese on top.
  6. Bake for 20-25 minutes until hot, bubbly, and lightly golden on top.
  7. Let rest for 5 minutes before serving. Garnish with green onions and blue cheese if desired.

Notes

For a slow cooker version, combine all ingredients (except 1/2 cup cheese) in a slow cooker, cook on LOW for 2-3 hours or HIGH for 1-1.5 hours, then top with remaining cheese and let melt. To make ahead, assemble in baking dish, refrigerate up to 24 hours, then bake adding 10 minutes. For less spice, reduce hot sauce to 1/4 cup. For keto, serve with vegetables or pork rinds.
