  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1/2 cup whole milk (or half-and-half for extra richness)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)
  • 1/4 cup pickled jalapeños, finely chopped (optional)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1/2 cup cooked chorizo or ground beef (optional)
  • 1/4 cup diced white onion, sautéed until soft (optional)

Instructions

  1. Cube the Velveeta into 1-inch pieces.
  2. In a medium saucepan over medium-low heat, combine cubed Velveeta, undrained Rotel, and milk.
  3. Stir constantly with a wooden spoon or silicone spatula until cheese begins to soften, about 2 minutes.
  4. Add cumin, garlic powder, and smoked paprika. Stir to combine.
  5. Continue stirring until mixture is completely smooth and uniform, about 4-5 minutes total. The queso should be thick but pourable.
  6. Taste and adjust: add pickled jalapeño brine for more heat or a splash of milk to thin.
  7. Fold in optional stir-ins (chorizo, sautéed onions, pickled jalapeños) if using.
  8. Transfer to a warm slow cooker set to low, or serve directly from the saucepan.

Notes

Low heat is essential to prevent separation. Stir constantly. If queso gets too thick, add milk—not water. This queso can be made ahead and kept warm in a slow cooker. Do not freeze.
