  • ¼ cup dark chocolate chips (optional)
  • 2 tablespoons flaxseed or chia seeds (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup.
  2. In a large bowl, whisk together the rolled oats, baking powder, pumpkin pie spice, and salt.
  3. In a medium bowl, combine the pumpkin puree, milk, maple syrup, eggs, melted coconut oil (or butter), and vanilla extract. Whisk until smooth and fully blended.
