  • 1/3 cup honey
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup crushed mini pretzels
  • 2 tablespoons flaxseed meal (optional)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Measure out all ingredients: 1 cup peanut butter, 1/3 cup honey, 1 1/2 cups rolled oats, 1 cup crushed mini pretzels, 2 tablespoons flaxseed meal, 1 teaspoon vanilla extract, and a pinch of sea salt.
  2. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and well blended.
  3. Add oats, crushed pretzels, flaxseed meal, and sea salt to the wet mixture. Stir until evenly combined and the mixture holds together when pressed but is not too sticky.
  4. Using your hands, roll the mixture into 1-inch balls. If sticky, dampen hands slightly with water to help.
  5. Place the formed bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Serve chilled or store in an airtight container in the refrigerator for up to one week or freeze for up to three months.

Notes

If peanut butter is oily, stir before mixing. Adjust texture by adding honey or oats if bites are too crumbly or sticky. Chill bites for at least 30 minutes for best texture. Use gluten-free oats and pretzels for gluten-free version. Substitute sunflower seed butter and seed-based ingredients for nut-free version.
