A festive Halloween appetizer featuring hard-boiled eggs filled with a creamy, green-tinted guacamole mixture and garnished to look like Frankenstein’s monster.

Ingredients

  • 12 large eggs, hard-boiled and peeled
  • 2 large ripe avocados, flesh scooped out
  • 2 tablespoons fresh lime juice
  • 2 tablespoons finely diced red onion
  • 2 tablespoons fresh cilantro, chopped
  • 1 small jalapeño, seeded and finely minced
  • 1 small clove garlic, minced
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • 12 drops green gel food coloring
  • Fresh chives, cut into small pieces
  • Slivered almonds
  • Thinly sliced black olives
  • Mayonnaise (optional, for piping details)

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by an inch.
  2. Bring water to a rolling boil over medium-high heat, then turn off heat, cover, and let sit for 12 minutes.
  3. Prepare an ice bath with cold water and ice cubes.
  4. Transfer eggs to the ice bath and let cool for at least 15 minutes.
  5. Peel the cooled eggs under running water and slice them in half lengthwise.
  6. Scoop out the yolks into a medium bowl and set the white halves aside.
  7. Add avocado flesh, lime juice, red onion, cilantro, jalapeño, garlic, cumin, salt, and pepper to the yolks.
  8. Mash the mixture with a fork until creamy but with some small chunks remain.
  9. Mix in green gel food coloring one drop at a time until the desired spooky green shade is reached.
  10. Transfer the guacamole mixture to a piping bag fitted with a star tip.
  11. Pipe the filling into the egg white halves.
  12. Garnish with black olive slices for eyes, chives for hair, and slivered almonds for eyebrows or stitches.
  13. Refrigerate until ready to serve.

Notes

Soak diced red onion in cold water for 10 minutes to remove sharp bite. Use gel food coloring instead of liquid to maintain thickness. Do not overcook eggs to prevent green rings around yolks. Keep filling refrigerated to prevent avocado oxidation. Garnishes should be added just before serving.
