These spooky deviled egg eyeballs are a fun, easy, and delicious Halloween party snack that combines creepy visuals with classic deviled egg flavor. They are quick to make, crowd-pleasing, and surprisingly healthy.

Ingredients

Scale
  • 12 large hard-boiled eggs
  • 1/4 cup mayonnaise (preferably Hellmann’s or Duke’s)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Few dashes Worcestershire sauce
  • Kosher salt and freshly cracked black pepper to taste
  • Black olives (pitted, for pupils)
  • Paprika (for garnish)
  • Chives or green onions (optional, for vein effect)

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by an inch. Bring to a rolling boil, then remove from heat, cover, and let sit for 12 minutes.
  2. Prepare an ice bath and transfer eggs to it immediately after sitting. Let cool for at least 15 minutes to stop cooking and ease peeling.
  3. Gently tap and peel the eggs under running water if needed. Pat them completely dry with paper towels.
  4. Slice each egg in half lengthwise. Use a small spoon to scoop out the yolks into a medium bowl, keeping the whites intact.
  5. Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, Worcestershire sauce, salt, and pepper until smooth. Adjust consistency with more mayo or mustard if needed.
  6. Transfer the yolk mixture to a piping bag fitted with a star tip. Pipe the filling back into the egg white halves, creating a mound with a slight indentation in the center.
  7. Slice black olives into thin rounds (about 1/4 inch diameter). Place a slice in the center of each yolk mound to form the pupil.
  8. Lightly sprinkle paprika over the eggs for a bloodshot effect. Optionally add a dot of red food coloring mixed with water.
  9. Refrigerate for at least 30 minutes before serving to allow flavors to meld and filling to set.

Notes

Ensure eggs are completely dry before assembling to maintain presentation. If the filling is too soft, chill it for 10 minutes before piping. For best results, chill the egg whites for 15 minutes after scooping out yolks to keep them firm. Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not reheat.
