Savory Bacon-Wrapped Little Smokies with Brown Sugar Glaze

A quick and easy party snack featuring juicy little smokies wrapped in crispy bacon and glazed with a sweet-savory brown sugar mixture. Perfect for gatherings and last-minute entertaining.

  • 24 little smokies (small cocktail sausages)
  • 12 slices bacon, cut in half lengthwise
  • 1/2 cup packed brown sugar (light or dark)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon Dijon or yellow mustard
  • 1/2 teaspoon garlic powder (optional)
  • Freshly ground black pepper, to taste
  • Toothpicks for securing bacon

Instructions

  1. Preheat oven to 400°F (205°C).
  2. In a small bowl, whisk together brown sugar, honey or maple syrup, mustard, garlic powder, and black pepper until thick but spreadable. Set aside.
  3. Cut each bacon slice in half lengthwise. Wrap each little smokie snugly with a half slice of bacon and secure with a toothpick. Repeat for all smokies.
  4. Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange bacon-wrapped smokies seam side down on the rack or directly on foil, spacing evenly.
  5. Brush each smokie generously with the brown sugar glaze.
  6. Bake for 20–25 minutes, brushing a second layer of glaze halfway through and turning smokies if needed for even cooking. Watch for golden, crispy bacon.
  7. Remove from oven and let cool for 5 minutes to allow glaze to set. Serve warm.

Notes

Use thick-cut bacon for best crispiness. Cutting bacon slices in half lengthwise helps wrap smokies without overpowering them. Brushing glaze twice builds a deep caramelized flavor. If bacon crisps too fast, lower oven temperature slightly and bake longer. Reheat leftovers in oven at 350°F for 10 minutes to restore crispness; avoid microwaving.
