  • Juice of 1 medium lemon (about 2 tablespoons or 30 ml)
  • 1 tablespoon (21 grams) raw honey
  • 2 cups (480 ml) filtered water
  • Optional: a few fresh mint leaves
  • Optional: fresh ginger slices
  • Optional: ice cubes

Instructions

  1. Roll the lemon on the counter to loosen the juices, then cut it in half. Use a juicer or your hands to squeeze out about 2 tablespoons (30 ml) of fresh lemon juice. Remove any seeds.
  2. Measure 1/8 teaspoon (0.7 grams) Pink Himalayan salt.
  3. Add 1 tablespoon (21 grams) raw honey. If honey is thick, warm it slightly in a bowl of warm water to ease stirring.
  4. Pour in 2 cups (480 ml) of filtered, room temperature water.
  5. Stir briskly with a spoon or small whisk until the salt and honey are completely dissolved, about 30 seconds.
  6. Add optional fresh mint leaves or a thin slice of ginger if desired. Let steep for 5 minutes before drinking.
  7. Serve over ice cubes if preferred chilled, or enjoy as is. Store leftovers in the fridge for up to 24 hours and stir before drinking.
