A crisp and bubbly mojito-inspired mocktail made with ginger-lemon kombucha, fresh mint, lime juice, and a touch of sweetness. This gut-friendly drink offers a refreshing, probiotic-rich alternative to traditional sodas and juices.

  • 8 ounces (240 ml) ginger-lemon kombucha
  • 8 to 10 large fresh mint leaves
  • 1 ounce (30 ml) fresh lime juice (from 1 large lime)
  • 1 tablespoon simple syrup or honey
  • Ice cubes (enough to fill glass halfway)
  • 2 ounces (60 ml) sparkling water (optional)

Instructions

  1. Place 8 to 10 fresh mint leaves at the bottom of your serving glass.
  2. Using a muddler or the back of a wooden spoon, gently press and twist the mint leaves about 5 to 7 times to release aroma and oils without shredding.
  3. Pour in 1 ounce (30 ml) of freshly squeezed lime juice and 1 tablespoon of simple syrup or honey. Stir gently to combine and dissolve the sweetener.
  4. Fill the glass halfway with ice cubes to chill the mixture.
  5. Slowly pour in 8 ounces (240 ml) of ginger-lemon kombucha, pouring gently to preserve bubbles and prevent foaming.
  6. If desired, add 2 ounces (60 ml) of sparkling water to adjust fizz and dilute flavor.
  7. Use a bar spoon or stirrer to gently mix the ingredients without losing carbonation.
  8. Garnish with a sprig of fresh mint and a lime wheel on the rim before serving.

Notes

Do not over-muddle the mint to avoid bitterness. Pour kombucha slowly to prevent foaming and spilling. Chill kombucha beforehand to preserve carbonation. Adjust sweetness based on kombucha flavor and personal preference. Can substitute mint with basil or lemon balm for different herbal notes. For a sugar-free version, omit syrup or use stevia. Add sparkling water to dilute if kombucha is too strong.
