A quick and easy homemade frozen strawberry daiquiri slushie recipe that balances sweet, tart, and icy textures for a perfect summer refreshment.

  • 2 cups fresh strawberries, hulled and halved
  • 1/2 cup (120 ml) white rum (omit or replace with sparkling water for virgin version)
  • 1/4 cup (60 ml) fresh lime juice
  • 1/4 cup (50 g) granulated sugar (or raw sugar/coconut sugar)
  • 3 cups (about 700 g) ice cubes, crushed
  • Optional: handful fresh mint leaves
  • Optional: simple syrup for smoother sweetness
  • Optional: frozen mixed berries (swap half the strawberries)
  • Optional: monk fruit sweetener or erythritol for low-sugar version
  • Optional: scoop vanilla frozen yogurt or coconut yogurt for creamy texture

Instructions

  1. Wash, hull, and halve about 2 cups (300 g) of fresh strawberries.
  2. Juice 2 to 3 limes to get 1/4 cup (60 ml) of fresh lime juice.
  3. If your blender can’t handle ice well, crush 3 cups (about 700 g) of ice cubes using an ice crusher or place them in a sturdy zip-top bag and crush with a rolling pin. Set aside.
  4. In your blender, add the strawberries, white rum (1/2 cup or 120 ml), freshly squeezed lime juice, granulated sugar (1/4 cup or 50 g), and crushed ice.
  5. Pulse the mixture first to break up the ice and fruit, then blend on high for about 30-45 seconds until you get a thick, slushy consistency.
  6. Taste and adjust sweetness or thickness by adding sugar/simple syrup or a splash of water/rum as needed, then blend briefly again.
  7. Pour into chilled glasses and garnish with a fresh strawberry or lime wedge if desired. Serve immediately with a straw or small spoon.

Notes

Use fresh, clean ice cubes for best texture. Pulse ice and fruit first to avoid overheating the blender. Avoid over-blending to prevent watery texture. Use room temperature sugar for better dissolution. For virgin version, omit rum and add sparkling water or extra lime juice. Store leftovers in airtight container in freezer and re-blend before serving.
