A delightfully smooth and refreshing frozen peach bellini slushie that balances sweet peaches, sparkling prosecco, and a splash of citrus juice for the perfect summer party drink.

Ingredients

Scale
  • 2 cups (300 grams) frozen peach slices
  • 1 cup (240 ml) chilled prosecco
  • 1 tablespoon (15 ml) fresh lemon juice
  • 12 teaspoons (510 ml) simple syrup or honey (optional)
  • 1 cup (150 grams) ice cubes
  • Mint leaves for garnish (optional)

Instructions

  1. Measure out 2 cups (300 g) of frozen peach slices, 1 cup (240 ml) chilled prosecco, 1 tablespoon (15 ml) fresh lemon juice, 1 cup (150 g) ice cubes, and optional sweetener.
  2. Add frozen peaches and ice cubes into the blender first. Pulse a few times to break down the ice and fruit.
  3. Pour in the prosecco and lemon juice. Add 1 teaspoon (5 ml) of simple syrup or honey if you want a sweeter slushie.
  4. Blend on high for about 30-45 seconds until the mixture is thick and frosty but still pourable. Adjust consistency by adding more prosecco or frozen peaches/ice cubes as needed.
  5. Taste and adjust sweetness or lemon juice if needed.
  6. Pour into chilled glasses and garnish with fresh mint leaves if desired. Serve immediately.

Notes

Add prosecco last and blend briefly to preserve bubbles. Use very cold frozen peaches and ice cubes for best texture. Adjust sweetness based on peach ripeness. For non-alcoholic version, substitute prosecco with sparkling water or lemon-lime soda. Prepare fruit and ice mixture ahead but blend with prosecco just before serving to keep fizz fresh.
