These frozen peach bellini popsicles combine fresh peaches, honey, and sparkling wine for a quick, easy, and refreshing summer treat with a bubbly twist.

Ingredients

  • 3 medium fresh peaches, peeled and chopped
  • 2 tablespoons honey (or maple syrup as a substitute)
  • 1 cup (240 ml) sparkling wine (dry or semi-sweet, preferably Moscato)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 1/4 cup (60 ml) water (to adjust consistency if needed)
  • Pinch of salt

Instructions

  1. Peel and chop about 3 medium peaches into chunks. Peeling is optional if peaches are very ripe but recommended for smooth texture.
  2. In a blender or food processor, combine peaches, honey, lemon juice, and vanilla extract. Blend until completely smooth. Add water if the puree is too thick.
  3. Gently stir in 1 cup of sparkling wine without blending again to preserve bubbles.
  4. Add a pinch of salt and adjust sweetness if needed by adding more honey.
  5. Pour the mixture into popsicle molds, leaving a small gap at the top for expansion. Insert sticks.
  6. Freeze molds for at least 4-6 hours or overnight until fully firm.
  7. To unmold, briefly run warm water over the outside of the molds and serve immediately or keep frozen.

Notes

Peel peaches for a smoother texture. Fold in sparkling wine gently to preserve fizz. Use molds that hold 3-4 ounces for best size. Freeze uncovered for the first hour before inserting sticks to keep them upright. For non-alcoholic version, substitute sparkling wine with sparkling white grape juice or club soda.
