A quick and easy frozen peach bellini pitcher recipe perfect for summer parties, combining peach purée, frozen peaches, and sparkling wine for a refreshing and bubbly drink.

Ingredients

Scale
  • 3 cups fresh or frozen peaches, sliced
  • 1 cup frozen peaches, diced
  • 1 cup peach nectar or juice (natural, no added sugar)
  • 1 bottle (750 ml) Prosecco or sparkling wine (dry recommended)
  • 1 tablespoon fresh lemon juice
  • 12 tablespoons honey or agave syrup (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the peaches: peel and slice about 3 cups if using fresh; if frozen, measure as is. Keep 1 cup separate for frozen chunks.
  2. Make the peach purée: combine the 3 cups peeled peaches, 1 cup peach nectar, fresh lemon juice, and honey or agave syrup if using in a blender. Blend until smooth but slightly thick.
  3. Assemble the pitcher: pour the purée into a large pitcher. Add the frozen diced peaches and gently stir to combine.
  4. Add the sparkling wine: slowly pour in chilled Prosecco or sparkling wine. Stir gently to mix without losing bubbles.
  5. Garnish and serve: add fresh mint sprigs if desired. Serve immediately in glasses, ensuring each glass gets some frozen peach chunks.

Notes

Let frozen peaches thaw for 10 minutes before blending to avoid icy or grainy texture. Use chilled sparkling wine to keep bubbles fresh. Stir sparkling wine gently to preserve fizz. For non-alcoholic version, substitute sparkling wine with sparkling water or lemon-lime soda and add a splash of white grape juice. Freeze peach nectar in ice trays for extra chill without dilution. Prepare peach purée ahead and refrigerate; add sparkling wine just before serving.
