A quick and easy summer drink combining sweet watermelon, dry rosé wine, fresh mint, and a touch of lemon juice for a refreshing boozy slushie perfect for hot days.

  • 4 cups seedless watermelon, cubed
  • 1 cup (240 ml) dry rosé wine (e.g., Whispering Angel or Miraval)
  • 1012 fresh mint leaves, plus extra for garnish
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons simple syrup or honey (adjust to taste)
  • 2 cups ice cubes
  • Optional: pinch of salt to enhance sweetness
  • Optional: splash of sparkling water for fizz

Instructions

  1. Cut about 4 cups of seedless watermelon into cubes, removing seeds if necessary (about 5 minutes).
  2. Place 10-12 fresh mint leaves in the blender jar and gently muddle with a muddler or spoon to release oils.
  3. Add watermelon cubes and 2 tablespoons of freshly squeezed lemon juice to the blender.
  4. Pour in 1 cup (240 ml) of dry rosé wine.
  5. Add 2 tablespoons of simple syrup or honey; adjust sweetness as desired.
  6. Add 2 cups of ice cubes. For a fizzier drink, use half the ice and add a splash of sparkling water after blending.
  7. Blend on high speed for 1 to 2 minutes until smooth and icy.
  8. Taste and adjust thickness or sweetness by adding more rosé, water, or sweetener if needed; blend briefly again.
  9. Pour into chilled glasses and garnish with a sprig of fresh mint and a small watermelon wedge.

Notes

Freeze watermelon cubes overnight for a smoother, colder slushie and reduce ice needed. Chill glasses before serving to keep drink cold longer. Adjust sweetness based on watermelon ripeness. For non-alcoholic version, substitute rosé with sparkling white grape juice or rose lemonade.
