Refreshing Boozy Cherry Limeade with Rum Cocktail

A quick and easy summer cocktail combining fresh lime juice, cherry syrup, white rum, and soda water for a bright, refreshing drink perfect for backyard parties and casual hangouts.

  • 45 medium fresh limes, juiced (about 1/2 cup or 120 ml fresh lime juice)
  • 1 cup pitted maraschino cherries
  • 34 tablespoons cherry syrup or grenadine
  • 4 ounces white rum (such as Bacardi)
  • 1 cup soda water (plain or lime-flavored)
  • Plenty of ice cubes (crushed preferred)
  • 12 tablespoons simple syrup (optional, for sweetness)
  • Fresh mint leaves for garnish
  • Lime slices for garnish

Instructions

  1. Roll each lime on the counter to soften, then cut in half and juice using a citrus juicer. Strain to remove seeds and pulp for a smooth base.
  2. Place the pitted maraschino cherries in a blender and pulse until broken down into a chunky puree. For smoother syrup, blend longer. Pour puree through a fine mesh sieve over a bowl and press with a spoon to extract juice, discarding solids. Add cherry syrup or grenadine and simple syrup if desired for sweetness.
  3. In a large pitcher, mix fresh lime juice, cherry syrup, and white rum. Stir gently to blend. Taste and adjust sweetness with more simple syrup if needed.
  4. Fill glasses or the pitcher with plenty of crushed or cubed ice.
  5. Pour soda water over the mixture to fill the pitcher or glasses. Stir gently to combine without losing fizz.
  6. Garnish with fresh mint sprigs and lime slices. Serve immediately for best fizz and flavor.

Notes

Use fresh lime juice for best flavor. Adjust sweetness with simple syrup to taste. Stir gently after adding soda water to preserve fizz. Crushed ice cools faster and dilutes slower than cubes. Cherry syrup can be made ahead and stored refrigerated for up to a week. For a non-alcoholic version, replace rum with sparkling water or lemon-lime soda and increase cherry syrup.
