  • ½ cup shredded sharp cheddar cheese
  • 1 cup long grain white rice, rinsed
  • 2 cups water or low-sodium chicken broth
  • 1 tbsp olive oil
  • Juice of 1 lime (about 2 tbsp)
  • ¼ cup fresh cilantro, chopped
  • Salt, to taste

Instructions

  1. Prepare the Cilantro Lime Rice: Rinse 1 cup of long grain white rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, 2 cups water or chicken broth, and 1 tbsp olive oil. Bring to a boil over high heat.
  2. Once boiling, reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is fully absorbed. Remove from heat and let sit, covered, for 5 minutes to steam.
  3. Fluff the rice with a fork, then stir in the juice of 1 lime, ¼ cup chopped fresh cilantro, and salt to taste. Set aside. If the rice feels sticky or wet, give it another minute uncovered on low heat to dry out slightly.
  4. Cook the Ground Beef Filling: Heat a large skillet over medium-high heat. Add the diced onion and cook for about 3 minutes, stirring occasionally until softened.
  5. Add the minced garlic and cook for 30 seconds until fragrant. Add 1 lb ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 6-8 minutes, stirring frequently.
  6. Drain excess fat if needed. Sprinkle in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir well to evenly coat the beef with spices.
  7. Lower the heat to medium-low, sprinkle shredded cheddar cheese over the beef mixture, and cover the pan for 2 minutes to let the cheese melt.
  8. Assemble the Taco Bowls: Spoon a generous scoop of cilantro lime rice into each bowl. Top with the cheesy ground beef mixture.
  9. Add optional toppings like sliced avocado, salsa, sour cream, or jalapeño slices. Serve immediately for the best melty-cheese experience. If prepping ahead, keep rice and beef separate and reheat gently before serving.

Notes

For a dairy-free version, swap cheddar cheese for vegan cheese or omit it. Use chicken broth for extra flavor in rice. Avoid overcrowding the pan when browning beef to get a good sear. Leftovers store well in the fridge for up to 3 days; freeze beef filling up to 2 months. Rinse rice well to prevent clumping and stir in lime juice and cilantro after cooking for fresh flavor.
