  • 1 pound (450g) flank steak or sirloin, thinly sliced against the grain
  • 4 cups (about 300g) fresh broccoli florets, washed and trimmed
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger (optional)
  • 1/4 cup (60ml) soy sauce (regular or low-sodium; tamari for gluten-free)
  • 2 tablespoons oyster sauce (or hoisin sauce as substitute)
  • 1 teaspoon brown sugar
  • 1/4 cup (60ml) beef broth or water
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil (neutral oil like canola or avocado)
  • 2 stalks green onions, sliced thin
  • Sesame seeds (optional, for garnish)

Instructions

  1. Slice the beef thinly against the grain into bite-sized strips. Marinate the beef in 1 tablespoon soy sauce and 1 teaspoon cornstarch for 10 minutes while prepping other ingredients.
  2. Wash and cut broccoli into small florets, about 4 cups (300g). Trim stems if desired and set aside.
  3. In a small bowl, combine 1/4 cup soy sauce, 2 tablespoons oyster sauce, 1 teaspoon brown sugar, 1/4 cup beef broth or water, 1 teaspoon grated ginger, and 3 minced garlic cloves. Stir well to make the sauce.
  4. Heat 2 tablespoons vegetable oil in a wok or large skillet over medium-high heat until shimmering.
  5. Add the marinated beef in a single layer. Let it sear without moving for about 1 minute to develop color, then stir-fry for another 1-2 minutes until just cooked through. Remove beef from pan and set aside.
  6. In the same pan, add a splash more oil if needed, then toss in broccoli florets. Stir-fry for 2-3 minutes until bright green and starting to soften. Add a splash of beef broth or water and cover with a lid or foil to steam broccoli for 1-2 minutes, keeping it crunchy but tender.
  7. Return beef to the pan with broccoli. Stir the sauce again, then pour it over the mixture. Stir continuously for 1-2 minutes until the sauce thickens and coats beef and broccoli evenly.
  8. Remove from heat. Sprinkle sliced green onions and sesame seeds on top for garnish. Serve immediately.

Notes

Slice beef thinly against the grain for tenderness. Avoid overcrowding the pan to ensure proper searing. Use fresh garlic and ginger for best flavor. Steam broccoli briefly to keep it crisp-tender. Rest beef off heat to prevent overcooking. Frozen broccoli can be used if thawed and drained well. For gluten-free, use tamari and gluten-free oyster sauce alternatives.
