  • 1 teaspoon fresh thyme or rosemary, finely chopped
  • Pinch of salt

Instructions

  1. Bring the steaks to room temperature by letting them sit on the counter for about 20 minutes.
  2. Prepare the garlic butter by mixing softened butter, minced garlic, chopped herbs, and a pinch of salt in a small bowl.
  3. Pat the steaks dry with paper towels. Generously season both sides with salt and freshly cracked black pepper.
  4. Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat and add the olive oil. Heat until the oil shimmers but does not smoke.
  5. Place the steaks in the hot skillet and sear undisturbed for about 3-4 minutes per side for medium-rare (130°F/54°C internal temperature). Adjust cooking time for preferred doneness.
  6. During the last minute of cooking, add a tablespoon of the prepared garlic butter to the skillet. Tilt the pan and spoon the melted butter over the steaks repeatedly to baste.
  7. Transfer the steaks to a warm plate and let them rest loosely covered with foil for 5-10 minutes to allow juices to redistribute.
  8. Serve the steaks topped with remaining garlic butter, sprinkled with fresh parsley, and accompanied by lemon wedges if desired. Slice against the grain if serving sliced.

Let steaks come to room temperature before cooking for even doneness. Pat steaks dry to ensure a good sear. Use a meat thermometer to check doneness: 130°F for medium-rare, 140°F for medium.
