  • 1 cup (240g) canned pumpkin puree
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup (170g) chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a large mixing bowl, whisk together pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. Add flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger to the wet mixture. Mix gently until just combined; do not overmix.
  4. Fold in chocolate chips using a spatula.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tent with foil if browning too quickly.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Do not overmix the batter to ensure a tender crumb. Room temperature eggs help emulsify the batter better. The bread tastes even better on the second day as flavors meld.
