A perfectly balanced, make-ahead breakfast casserole featuring crispy edges, a tender center, and savory sausage. Ideal for meal prep and busy mornings.

Ingredients

  • Hash browns or diced potatoes (frozen shredded or par-boiled fresh)
  • Breakfast sausage (mild or spicy pork, or turkey sausage)
  • Bread or bagels (day-old ciabatta, sourdough, or bagels, diced)
  • Large eggs
  • Milk or cream (whole milk or half-and-half)
  • Dijon mustard
  • Hot sauce (optional)
  • Shredded cheddar cheese
  • Fresh chives or green onions, chopped
  • Butter (for greasing)
  • Salt and pepper

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter.
  2. Cook breakfast sausage in a skillet over medium heat until browned and crumbled. Drain excess grease and let cool slightly.
  3. Spread hash browns or diced potatoes evenly in the bottom of the baking dish. Layer diced bread on top (or mix with potatoes). Sprinkle cooked sausage evenly over the base.
  4. In a large bowl, whisk eggs, milk, Dijon mustard, hot sauce, salt, and pepper until uniform and frothy.
  5. Pour egg mixture over the layered ingredients. Press down gently to ensure ingredients are submerged. For make-ahead, cover tightly and refrigerate overnight.
  6. If baking immediately or after refrigerating, let sit for 15 minutes to take chill off. Sprinkle shredded cheese on top.
  7. Bake for 45-55 minutes until the center is set, edges are golden brown, and a knife inserted comes out clean.
  8. Rest for 10 minutes before slicing to allow eggs to set fully. Garnish with fresh chives or green onions.

Notes

Use day-old bread to prevent mushiness. Par-boil fresh potatoes to ensure they cook through. Let the casserole rest for 10 minutes after baking to allow the structure to firm up. Store leftovers in the fridge for up to 4 days or freeze individual slices for up to 2 months.
