  • Cheese slices (optional, American or cheddar)
  • Butter, for toasting rolls and sauce
  • Special Sauce:
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon dill pickle relish
  • 1 teaspoon yellow mustard
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • A few drops hot sauce (optional)

Instructions

  1. Prepare the Special Sauce: In a bowl, combine mayonnaise, ketchup, dill pickle relish, yellow mustard, smoked paprika, garlic powder, onion powder, and hot sauce if using. Mix well until smooth and refrigerate.
  2. Preheat a cast iron skillet or heavy griddle over medium-high heat for about 5 minutes until very hot.
  3. Divide ground beef into 8 equal portions (about 2 ounces each) and gently roll into loose balls.
  4. Slice Hawaiian rolls in half and spread a thin layer of butter on cut sides. Toast butter-side down in a separate skillet or toaster oven until golden and slightly crisp, about 2 minutes. Set aside.
  5. Place 2-3 beef balls in the hot skillet, leaving space between each. Immediately press down firmly with a metal spatula to smash each ball into a thin patty about ¼ inch thick. Hold for 10 seconds.
  6. Season each patty with salt and pepper.
  7. Cook patties without moving for 2-3 minutes until edges are dark and crispy and juices bubble on top, then flip.
  8. If using cheese, place a slice on each patty immediately after flipping and cook for another minute until melted.
  9. Assemble sliders by spreading special sauce on bottom halves of toasted rolls, placing hot patties on top, adding desired toppings, and capping with top halves.
  10. Serve immediately while hot and juicy.
