This high-protein cottage cheese banana bread is tender, moist, and subtly sweet with over 20 grams of protein per slice. Made with simple ingredients, it’s a quick and easy breakfast or snack that fuels your day without the crash.

Ingredients

Scale
  • 3 medium ripe bananas (about 1 cup mashed)
  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 large eggs
  • 1 ½ cups oat flour
  • ¼ cup maple syrup or honey
  • 3 tablespoons coconut oil or butter, melted
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup chopped walnuts, dark chocolate chips, or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides for easy lifting. Lightly grease the parchment with cooking spray or butter.
  2. In a large mixing bowl, mash the three ripe bananas with a fork until smooth. A few small lumps are fine—they add texture. You should have about 1 cup of mashed banana.
  3. In a blender or food processor, blend the cottage cheese until completely smooth. This takes about 30 seconds. Scrape down the sides as needed. If you don’t have a blender, whisk it vigorously in a bowl until mostly smooth.
  4. To the mashed bananas, add the blended cottage cheese, eggs, maple syrup, melted coconut oil (or butter), and vanilla extract. Whisk until everything is well combined and smooth. The mixture should look pale yellow and slightly frothy.
  5. In a separate bowl, whisk together the oat flour, baking soda, cinnamon, and salt. Make sure there are no lumps. If you’re using mix-ins like walnuts or chocolate chips, toss them in the flour mixture—this prevents them from sinking to the bottom of the loaf.
  6. Pour the dry ingredients into the wet ingredients. Fold gently with a spatula until just combined. Do not overmix—a few streaks of flour are okay. Overmixing will make the bread tough.
  7. Pour the batter into the prepared loaf pan. Smooth the top with a spatula. If you’re adding a topping like sliced bananas or nuts, arrange them on top now.
  8. Bake for 28-32 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. The top should be golden brown and spring back when lightly touched. If the top is browning too quickly, tent loosely with foil after 20 minutes.
  9. Let the bread cool in the pan for 10 minutes. Then lift it out using the parchment paper and transfer to a cooling rack. Cool completely before slicing—this is crucial for clean slices and the right texture. Warm bread tends to crumble.

Notes

For extra protein, add a scoop of unflavored or vanilla protein powder and reduce oat flour by ¼ cup. Don’t skip blending the cottage cheese for a smooth texture. Use room temperature ingredients for best results. Let the bread cool completely before slicing to prevent crumbling.
