Healthy Turkey Chili – Perfect Game Day Comfort Food

A hearty and healthy turkey chili packed with lean protein, fiber-rich beans, and deep smoky flavor. Perfect for game day or a cozy weeknight dinner, this chili comes together in under 45 minutes and tastes even better the next day.

  • 1 lb ground turkey (93% lean)
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 large red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ¼ teaspoon cayenne pepper (optional)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup low-sodium chicken broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, Greek yogurt, sliced avocado, fresh cilantro, diced red onion, lime wedges

Instructions

  1. Prep your ingredients first: dice the onion, bell pepper, and jalapeño; mince the garlic; drain and rinse both cans of beans; open the cans of tomatoes and tomato sauce.
  2. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat until shimmering.
  3. Brown the turkey in batches: add half the ground turkey to the pot, cook undisturbed for 3-4 minutes until deeply browned, then break it up and cook until no longer pink. Transfer to a bowl and repeat with the remaining turkey.
  4. Reduce heat to medium. Add the diced onion, bell pepper, and jalapeño to the pot. Cook for 5-6 minutes, stirring occasionally, until softened and the onion is translucent.
  5. Stir in the minced garlic, chili powder, cumin, smoked paprika, oregano, and cayenne (if using). Cook for 1 minute, stirring constantly, until fragrant.
  6. Pour in the fire-roasted diced tomatoes (with juices), tomato sauce, and chicken broth. Stir well, scraping the bottom of the pot to release any browned bits.
  7. Mash 1 cup of the drained and rinsed beans (mix of kidney and black beans) with a fork or potato masher until mostly smooth but still chunky. Stir the mashed beans into the pot. Add the remaining whole beans and stir to combine.
  8. Return the browned turkey to the pot, along with any accumulated juices. Stir everything together.
  9. Bring the chili to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes, stirring occasionally. If too thick, add a splash more broth; if too thin, simmer uncovered for 5-10 more minutes.
  10. Taste and add salt and black pepper as needed. Start with 1 teaspoon of salt and adjust gradually.
  11. Turn off the heat and let the chili rest for 5-10 minutes before serving. Serve hot with desired toppings.

Notes

Toast spices in hot oil for 60 seconds to deepen flavor. Brown turkey in batches to avoid steaming. Start with less salt and adjust at the end. Chili tastes even better the next day. For a thicker chili, mash more beans or simmer uncovered. For a thinner chili, add more broth.
