  • 1 pound ground turkey (93% lean, 7% fat)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 large bell pepper (any color), diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 2 tablespoons tomato paste
  • ¼ cup low-sodium chicken broth
  • 1 cup white rice (jasmine or basmati), uncooked
  • 1½ cups water
  • ¼ teaspoon salt (for rice)
  • 1 teaspoon butter or olive oil (optional, for rice)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (frozen or canned), thawed or drained
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, sliced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Rinse 1 cup of jasmine rice under cold water until the water runs clear. Add rice, 1½ cups water, and ¼ teaspoon salt to a medium saucepan. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and set aside.
  2. While the rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground turkey to the skillet, breaking it up with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until browned and no longer pink.
  4. Reduce heat to medium. Add diced bell pepper, cumin, chili powder, smoked paprika, salt, and black pepper. Stir to coat the turkey evenly. Cook for 2 minutes until bell pepper starts to soften.
  5. Add tomato paste and stir for 1 minute. Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Simmer for 2-3 minutes until liquid mostly evaporates. Taste and adjust seasoning if needed.
  6. While turkey finishes, drain and rinse black beans. Thaw corn if frozen. Halve cherry tomatoes. Slice avocado just before serving. Chop cilantro. Cut lime into wedges.
  7. Divide cooked rice evenly among 4 meal prep containers (about ¾ cup each). Top each with an equal portion of seasoned ground turkey (about ¾ cup). Add black beans, corn, and cherry tomatoes in separate sections. Store avocado and cilantro separately and add just before eating.
  8. When ready to eat, reheat the bowl (minus avocado and cilantro) in the microwave for 2-3 minutes, stirring halfway through. Top with fresh avocado slices, cilantro, and a generous squeeze of lime juice.

Notes

For best results, use 93% lean ground turkey to keep the meat juicy. Store avocado and cilantro separately to prevent browning and wilting. The flavors improve after a day or two in the fridge. Add a splash of water or broth before reheating to restore moisture.
