Instructions

  2. Whisk the eggs lightly with a pinch of salt and pepper until yolks and whites are combined but not frothy.
  3. Heat a non-stick skillet over medium-low heat and add the olive oil. Swirl to coat evenly.
  4. Add the chopped spinach and cherry tomatoes to the pan. Stir gently until spinach wilts and tomatoes soften slightly without losing shape.
