These fudgy black cat brownie bites are a dense, moist Halloween treat featuring a rich chocolate base and a smooth ganache topping. They are easy to make, perfect for parties, and offer a spooky yet delicious twist on classic brownies.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (65g) all-purpose flour
  • 1/3 cup (30g) unsweetened cocoa powder (preferably dutched)
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup (60ml) heavy cream
  • 1/2 cup (90g) semi-sweet chocolate chips (for ganache)

Instructions

  1. Melt the 1/2 cup of unsalted butter in a medium saucepan over low heat or in the microwave. Let it cool slightly.
  2. In a large mixing bowl, whisk the melted butter and granulated sugar together. Add the eggs and vanilla extract, whisking vigorously for about two minutes until the mixture is glossy and pale.
  3. Sift the cocoa powder, flour, and salt into the wet mixture. Fold them in gently with a spatula until just combined, being careful not to overmix.
  4. Fold in the 1/2 cup of semi-sweet chocolate chips until evenly distributed.
  5. Preheat oven to 350°F (175°C). Lightly spray silicone black cat molds with non-stick cooking spray.
  6. Fill each mold cavity about 3/4 full with the batter.
  7. Bake for 10-12 minutes until the tops are set and slightly cracked. A toothpick should come out with moist crumbs.
  8. Cool the brownies in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. While brownies cool, heat the heavy cream in a small saucepan until it just begins to simmer.
  10. Pour the hot cream over the 1/2 cup of chocolate chips for the ganache. Let sit for one minute, then stir until smooth and glossy.
  11. Once brownies are completely cool, drizzle or spread the ganache over the top of each cat brownie.

Notes

Ensure brownies are completely cool before adding ganache to prevent it from sliding off. Use dutched cocoa powder for a darker, richer color. Do not overbake to maintain fudgy texture. Can be made gluten-free by swapping flour for a 1-to-1 blend, or dairy-free using coconut oil and cream.
