Fresh Watermelon Feta Salad with Mint

A quick and refreshing summer salad combining sweet watermelon, salty feta cheese, and fresh mint, perfect for hot days and easy to prepare in under 5 minutes.

Ingredients

  • 4 cups watermelon, cubed (seedless or seeds removed)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1 tablespoon extra virgin olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, optional

Instructions

  1. Cut the watermelon into manageable slices and cube about 4 cups (600g) of the juicy flesh, removing seeds if necessary.
  2. Rinse the mint leaves, pat dry, and roughly chop about 1/4 cup (10g). Tear gently by hand if a milder flavor is preferred.
  3. In a mixing bowl, combine the watermelon cubes, crumbled feta, and chopped mint. Toss gently to distribute evenly without turning the feta into paste.
  4. Drizzle 1 tablespoon of extra virgin olive oil and the juice of one lime over the salad. Sprinkle a pinch of sea salt and, if desired, freshly ground black pepper.
  5. Toss everything lightly once more to coat without breaking the watermelon.
  6. Taste and adjust lime juice or salt as needed for balance.
  7. Serve immediately for best freshness. If needed, cover and refrigerate for no more than 30 minutes.

Notes

Chill watermelon before cutting for juicier cubes. Handle mint gently to avoid bitterness. Prepare just before serving to keep watermelon crisp. Adjust salt and lime juice to balance sweetness and saltiness. For dairy-free, substitute feta with marinated tofu or vegan cheese.
