A simple, refreshing summer appetizer combining juicy watermelon, salty feta, fresh mint, and a tangy balsamic glaze. Perfect for quick gatherings and easy snacking.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, cut into 1-inch cubes or crumbled
  • Fresh mint leaves, whole or gently torn
  • Balsamic glaze (store-bought or homemade balsamic vinegar reduction)
  • Extra virgin olive oil (optional, for drizzling)
  • Wooden or bamboo skewers, about 4 inches long

Instructions

  1. Cut seedless watermelon into 1-inch cubes and set aside on paper towels to absorb excess moisture for about 5 minutes.
  2. Cut feta cheese into 1-inch cubes or crumble by hand for texture variety.
  3. Wash and pat dry fresh mint leaves; tear larger leaves gently to release aroma.
  4. If making balsamic glaze, pour 1 cup balsamic vinegar into a small saucepan, bring to a gentle boil, then simmer until reduced to about 1/4 cup and syrupy, about 15-20 minutes. Let cool.
  5. Thread one watermelon cube, one feta cube, and one mint leaf onto each skewer. Repeat pattern if skewers are longer, keeping balance.
  6. Optionally, drizzle or brush extra virgin olive oil over the skewers for a silky finish.
  7. Drizzle balsamic glaze over the skewers just before serving, starting with about 1 teaspoon per skewer.
  8. Serve immediately to enjoy the crispness and fresh flavors.

Notes

Use firm, juicy watermelon to avoid soggy skewers. Tear mint leaves gently to release oils without bruising. If grilling skewers with halloumi, soak wooden skewers in water for 10 minutes to prevent burning. Assemble skewers just before serving for best texture. Drizzle balsamic glaze last to keep presentation fresh.
