A quick and refreshing summer appetizer combining sweet watermelon, creamy feta, salty prosciutto, and fresh mint for a light and flavorful bite.

  • 4 cups fresh seedless watermelon, cut into 1-inch cubes
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint, finely chopped
  • 810 thin slices prosciutto
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Rinse and dry the watermelon. Cut off the rind and slice the flesh into 1-inch cubes (about 4 cups). Pat dry on paper towels to absorb excess juice.
  2. In a medium bowl, crumble 1 cup of feta cheese. Add finely chopped fresh mint and lemon zest if using. Gently combine with a fork.
  3. Lay out 8-10 thin slices of prosciutto. Cut each slice into halves or thirds to create strips for wrapping.
  4. Place a small spoonful of the feta-mint mixture on one watermelon cube. Wrap a strip of prosciutto around the cube, securing the feta. Use toothpicks if needed.
  5. Arrange the bites on a serving platter. Drizzle with extra virgin olive oil and grind fresh black pepper over the top. Serve immediately or refrigerate up to 2 hours before serving.

Notes

Pat watermelon cubes dry before assembly to prevent sogginess. Assemble close to serving time to keep prosciutto from getting limp. Optional toothpicks can be used to hold bites together. For dairy-free, swap feta with vegan cheese. For vegetarian, omit prosciutto and add balsamic glaze or toasted pine nuts.
