Fresh Sparkling Blueberry Lemonade with Mint

A light, bubbly, and refreshingly tart sparkling blueberry lemonade with a hint of mint, perfect for summer and easy to prepare in about 20 minutes.

Ingredients

  • 2 cups (300 g) fresh or frozen blueberries
  • 4 large lemons, juiced (about 1 cup / 240 ml lemon juice)
  • ½ to ¾ cup (100 to 150 g) granulated sugar, adjust to taste
  • A small handful (about 15) fresh mint leaves, plus extra for garnish
  • 1 cup (240 ml) water
  • 4 cups (960 ml) sparkling water or club soda, chilled
  • Ice cubes

Instructions

  1. Rinse 2 cups (300 g) of fresh or frozen blueberries and place them in a medium saucepan with 1 cup (240 ml) of water and ½ cup (100 g) granulated sugar. Adjust sugar up to ¾ cup if you prefer it sweeter.
  2. Bring the mixture to a low simmer over medium heat, stirring occasionally. Cook for about 10 minutes until the blueberries burst and release their juice.
  3. Remove from heat and strain the mixture through a fine mesh strainer into a bowl or pitcher, pressing with the back of a spoon to extract as much juice as possible. Discard solids.
  4. Stir in 1 cup (240 ml) freshly squeezed lemon juice.
  5. Gently bruise about 15 fresh mint leaves with a muddler or the back of a spoon to release oils. Add to the lemonade mixture and let steep for 10 minutes at room temperature.
  6. Remove the mint leaves and pour the blueberry-lemon mixture into a large pitcher filled with ice cubes.
  7. Add 4 cups (960 ml) of chilled sparkling water or club soda just before serving to keep the fizz.
  8. Pour into glasses over ice, garnish with fresh mint sprigs and a few whole blueberries if desired, and serve immediately.

Notes

Simmer blueberries gently to avoid burning and preserve fresh flavor. Strain well for a smooth texture. Bruise mint leaves instead of chopping to avoid bitterness. Add sparkling water last to maintain fizz. Adjust sugar after tasting as berry sweetness can vary. The lemonade is best served fresh but can be stored refrigerated for up to 2 days without sparkling water.
