Fresh Honey-Roasted Apricots with Greek Yogurt

A quick and easy breakfast featuring warm honey-roasted apricots served on creamy Greek yogurt and topped with crunchy granola, perfect for a light and satisfying start to your day.

Ingredients

  • 6 ripe apricots, halved and pitted
  • 2 tablespoons honey (preferably raw or wildflower)
  • 1 teaspoon olive oil (optional)
  • 1/4 teaspoon ground cinnamon
  • 1 cup Greek yogurt (full fat or 2%)
  • 1/2 cup granola
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of lemon zest (optional)
  • Chopped nuts or seeds for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
  2. Rinse and gently pat dry the apricots. Cut them in half and remove the pits. Place the halves cut side up in a mixing bowl.
  3. Drizzle honey and olive oil over the apricots. Sprinkle ground cinnamon evenly. Gently toss to coat each piece without smashing the fruit.
  4. Arrange the apricots cut side up on the prepared baking sheet, spacing them slightly apart.
  5. Roast the apricots in the oven for 12–15 minutes until tender and caramelized but not mushy.
  6. While apricots roast, stir vanilla extract and lemon zest into the Greek yogurt.
  7. Spoon the vanilla-infused Greek yogurt into serving bowls. Top with warm honey-roasted apricots.
  8. Sprinkle granola over the top and add chopped nuts or seeds if desired.
  9. Serve immediately, enjoying the contrast between warm apricots and cool yogurt.

Notes

If apricots aren’t caramelizing after 15 minutes, broil for 1-2 minutes watching closely. For creamier yogurt, stir honey directly into yogurt before assembling. Toast granola lightly if it is soft for extra crunch. Frozen apricots can be used if fresh are unavailable. For dairy-free, substitute Greek yogurt with coconut or almond yogurt and use vegan granola.
