Fresh Grilled Peach and Burrata Salad

A light and satisfying summer salad featuring smoky grilled peaches, creamy burrata cheese, and fresh basil, drizzled with honey or balsamic glaze.

  • 34 ripe but firm peaches, halved and pitted
  • 8 oz (225 g) burrata cheese
  • A handful of fresh basil leaves, roughly torn
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons honey or balsamic glaze
  • Salt and freshly cracked black pepper, to taste
  • Optional: toasted pine nuts or walnuts
  • Optional: fresh lemon juice

Instructions

  1. Preheat your grill or grill pan to medium-high heat (375°F to 400°F).
  2. Rinse and dry the peaches, then slice them in half and remove the pits. Brush the cut sides lightly with extra virgin olive oil.
  3. Place the peach halves cut side down on the grill. Cook for about 3-4 minutes until char marks appear and peaches soften slightly.
  4. Flip the peaches and grill the skin side for another 2 minutes. They should be tender but still hold their shape.
  5. Tear the burrata into bite-sized chunks and spread on a serving plate or bowl.
  6. Place the grilled peaches on top, skin side down for presentation.
  7. Scatter torn basil leaves over the peaches and burrata.
  8. Sprinkle flaky sea salt and cracked black pepper over everything.
  9. Drizzle with honey or balsamic glaze, or both, and a light drizzle of olive oil.
  10. Add optional toasted pine nuts or walnuts and a squeeze of fresh lemon juice if desired.
  11. Serve immediately while peaches are warm and burrata is creamy.

Notes

Avoid over-grilling peaches to prevent mushiness. Brush only the cut side with olive oil to prevent sticking and encourage caramelization. Serve immediately for best texture and flavor. Store grilled peaches and burrata separately if prepping ahead.
