Fresh Grilled Peach and Burrata Salad with Basil

A light and flavorful summer salad featuring smoky grilled peaches, creamy burrata cheese, and fresh basil, drizzled with olive oil and balsamic glaze.

  • 34 ripe but firm peaches, halved and pitted
  • 1 (8-ounce) ball fresh burrata cheese
  • 1/3 cup fresh basil leaves, gently torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Pinch of sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse and dry the peaches. Slice each peach in half and carefully remove the pit, keeping the halves intact.
  2. Preheat grill or grill pan over medium-high heat until hot.
  3. Lightly brush peach halves with olive oil to prevent sticking. Place peaches cut side down on the grill and grill for 3-4 minutes until caramelized grill marks appear.
  4. Flip peaches and grill the skin side for another 3-4 minutes until tender but not mushy.
  5. Arrange grilled peach halves on a serving plate. Tear burrata into chunks and distribute over the peaches.
  6. Scatter fresh basil leaves on top.
  7. Drizzle extra virgin olive oil and balsamic glaze evenly over the salad.
  8. Season with sea salt and freshly ground black pepper.
  9. Let the salad sit for 2-3 minutes to allow flavors to meld before serving.

Notes

Use firm but ripe peaches for best grilling results. Avoid over-handling burrata to maintain its creamy texture. If peaches are very juicy, pat dry after grilling to prevent watery salad. Grilled peaches can be prepared ahead and refrigerated; add basil and burrata just before serving.
