  • 1 large English cucumber or Persian cucumbers
  • 8 ounces (225 g) softened cream cheese
  • 1 teaspoon fresh lemon juice (optional)
  • 2 teaspoons Everything Seasoning
  • 1 tablespoon finely chopped fresh herbs (dill, chives, or parsley) (optional)
  • Salt and pepper to taste

Instructions

  1. Slice the cucumber lengthwise into thin strips about 1/8 inch (3 mm) thick using a mandoline or sharp knife.
  2. In a mixing bowl, whip the softened cream cheese with fresh lemon juice, salt, and pepper until smooth and creamy. Stir in Everything Seasoning and fresh herbs if using.
  3. Lay a cucumber slice flat on a cutting board and spread a thin, even layer (about 1 tablespoon) of the cream cheese mixture over the entire slice.
  4. Starting at one end, gently roll the cucumber slice into a tight spiral and place seam-side down on a serving plate.
  5. Repeat with remaining cucumber slices.
  6. Optionally, sprinkle extra Everything Seasoning or add a fresh herb leaf on top for garnish.
  7. Serve immediately or refrigerate up to 2 hours before serving.

Notes

Pat cucumber slices dry if too moist to prevent filling from sliding off. Chill cream cheese slightly before whipping for easier spreading. Prepare and serve quickly to maintain cucumber crispness. Vegan and dairy-free versions possible with plant-based cream cheese.
