A quick and easy Persian cucumber salad with a spicy sesame dressing that offers a fresh crunch and a nutty, zesty flavor perfect for light meals or sides.

  • 4 cups Persian cucumbers, sliced
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon rice vinegar
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey or maple syrup (optional)
  • 1 clove garlic, finely minced
  • 1/4 to 1/2 teaspoon red chili flakes
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, thinly sliced
  • A small handful fresh cilantro or mint, chopped (optional)
  • Salt and black pepper to taste

Instructions

  1. Rinse 4 cups of Persian cucumbers under cold water. Pat dry with a kitchen towel. Slice them thinly into rounds, about 1/8 inch thick. Set aside in a large bowl.
  2. Heat a dry skillet over medium heat. Add 2 tablespoons of sesame seeds and toast, stirring frequently, for 2 to 3 minutes until golden and fragrant. Remove from heat and let cool.
  3. In a small bowl, whisk together 2 tablespoons toasted sesame oil, 1 tablespoon rice vinegar, 2 tablespoons fresh lime juice, 1 teaspoon honey or maple syrup, 1 finely minced garlic clove, and 1/4 to 1/2 teaspoon red chili flakes. Adjust sweetness or heat as desired.
  4. Pour the dressing over the sliced cucumbers in the large bowl. Add the toasted sesame seeds and 2 sliced green onions. Toss gently to coat evenly. Season with salt and black pepper to taste.
  5. If using, sprinkle chopped cilantro or mint on top for a fresh brightness.
  6. Chill the salad in the refrigerator for about 10 minutes before serving to let flavors meld while keeping cucumbers crisp. Serve cold.

Notes

Use a sharp knife or mandoline for thin cucumber slices to maintain crunch. Toast sesame seeds fresh for best flavor. Adjust chili flakes to control spice level. Prepare salad just before serving or keep cucumbers and dressing separate to avoid sogginess. Substitute honey with maple syrup for vegan version. Cilantro can be swapped with mint, basil, or dill.
