  • 1 teaspoon honey or agave (balances acidity)
  • 1/2 teaspoon ground cumin (adds warmth)
  • Salt and pepper to taste
  • 2 large ripe avocados (look for ones that yield slightly to gentle pressure)
  • Optional: pinch of smoked paprika or chili powder for garnish

Instructions

  1. In a medium bowl, combine the black beans, corn, diced tomato, red bell pepper, red onion, jalapeño (if using), and chopped cilantro. Stir gently to mix without mashing.
  2. In a small bowl or jar, whisk together fresh lime juice, olive oil, honey, cumin, salt, and pepper until emulsified. Adjust seasoning to taste.
  3. Pour the lime vinaigrette over the cowboy caviar mixture and fold gently to coat evenly. Let sit for 5-10 minutes if time allows.
  4. Slice the avocados in half lengthwise and carefully remove the pits. Scoop out a little flesh to create a larger cavity for stuffing, leaving enough to hold shape.
