A quick and easy grilled pineapple dessert featuring caramelized cinnamon sugar and freshly whipped cream, perfect for summer BBQs and light treats.

Ingredients

Scale
  • 1 fresh pineapple, peeled, cored, and cut into 1/2-inch thick rings or wedges (810 pieces)
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Optional: toasted coconut flakes or chopped fresh mint leaves

Instructions

  1. Peel and core the pineapple, then slice into 1/2-inch thick rings or wedges (about 8-10 pieces).
  2. In a small bowl, mix 1/4 cup granulated sugar with 1 tablespoon ground cinnamon until combined. Set aside.
  3. Gently melt 2 tablespoons unsalted butter in a microwave-safe bowl or on the stove. Use immediately for basting.
  4. Preheat your grill or grill pan to medium-high heat, roughly 400°F (204°C). Ensure grill grates are clean to prevent sticking.
  5. Using a basting brush, coat each pineapple slice with melted butter. Then sprinkle generously with the cinnamon sugar mixture on both sides.
  6. Place pineapple slices on the grill. Cook for about 3-4 minutes per side, flipping carefully with tongs or a spatula, until deep grill marks appear and sugar caramelizes (about 8 minutes total).
  7. While the pineapple grills, whip 1 cup heavy cream with 1 teaspoon vanilla extract until soft peaks form (3-4 minutes with electric mixer or 5-7 minutes by hand). Keep chilled until serving.
  8. Arrange the warm grilled pineapple on plates, dollop with whipped cream, and sprinkle optional toasted coconut or fresh mint if desired.

Notes

Use ripe pineapple for best flavor and texture. Keep grill at medium-high heat (around 400°F) to avoid burning sugar. Brushing pineapple with butter before cinnamon sugar helps prevent sticking and promotes caramelization. Freshly whipped cream is preferred over store-bought for better texture and flavor. For dairy-free version, substitute butter with coconut oil and use coconut cream whipped topping.
