Instructions

  1. Prepare the Honey Balsamic Glaze: In a small saucepan, combine 1/4 cup balsamic vinegar, 2 tablespoons honey, and a pinch of salt. Heat over medium, stirring occasionally until the mixture reduces and thickens to a syrupy consistency (about 8-10 minutes). Set aside to cool.
  2. Preheat the Grill: Heat your grill to about 450°F (230°C). Clean and oil the grates lightly to prevent sticking.
  3. Prepare the Peaches: Brush peach halves with olive oil. Place cut-side down on the grill and grill for 3-4 minutes until char marks appear and fruit softens slightly. Flip and grill skin-side down for 2 more minutes. Remove and slice into wedges.
  4. Prepare the Pizza Base: Roll out pizza dough to about 12 inches diameter. Brush one side lightly with olive oil. Place oiled side down on the grill and cook for 2-3 minutes with lid closed until grill marks form and crust firms up.
