  • 1 teaspoon Worcestershire sauce (optional)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar (optional)
  • Pinch of salt
  • 4 oz (113g) crumbled blue cheese
  • 4 burger buns, toasted
  • Leafy lettuce or arugula
  • Optional: sliced tomatoes and pickles
  • Condiments like mustard or mayo (optional)

Instructions

  1. Heat butter and olive oil in a skillet over medium-low heat. Add sliced onions, pinch of salt, and brown sugar if using. Stir to coat and cook slowly, stirring every 5 minutes, for 30-40 minutes until deep golden brown.
  2. Combine ground beef with salt, pepper, and Worcestershire sauce in a bowl. Mix gently and form into 4 patties about ¾ inch thick, making a small indentation in the center of each.
  3. Preheat grill to medium-high heat (375-400°F). Clean and oil the grill grates.
  4. Grill patties for 4-5 minutes on the first side without moving. Flip and cook another 3-4 minutes for medium doneness. In the last minute, sprinkle blue cheese on each patty and close the grill lid to melt slightly.
  5. Toast buns cut side down on the grill for 1-2 minutes until lightly toasted.
  6. Assemble burgers by spreading condiments on bottom bun, adding lettuce or arugula, the blue cheese-topped patty, a spoonful of caramelized onions, and optional tomato or pickles. Top with the bun.
  7. Serve immediately while hot and melty.

Notes

For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, replace or omit blue cheese. Use a meat thermometer to ensure perfect doneness. Rest burgers for a few minutes before assembling to retain juices. Slow caramelization of onions is key for best flavor.
