- 1/2 cup (120 ml) cold water
- 1/2 cup (120 ml) vodka or flavored liquor of choice

- 1–2 tablespoons sugar (optional)
- 1 cup (240 ml) heavy whipping cream, cold
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, pour 1 cup boiling water over the cherry gelatin powder. Whisk until completely dissolved (about 1-2 minutes).
- Stir in 1/2 cup cold water, 1/2 cup vodka, and 1 tablespoon fresh lime juice. Add 1-2 tablespoons sugar if desired and whisk until dissolved.
- Carefully spoon or pour the mixture into small shot glasses or silicone molds, filling each about 3/4 full. Place on a tray to avoid spills.
- Refrigerate for at least 3-4 hours or until fully set. Alternatively, chill in the freezer for about 2.5 hours to speed up setting, watching to prevent freezing solid.
- Chill mixing bowl and beaters for 10-15 minutes. Pour cold heavy cream, powdered sugar, and vanilla extract into the bowl.
- Beat on medium-high speed until soft peaks form, about 3-4 minutes. Avoid over-whipping.
- Transfer whipped cream to a piping bag fitted with a star tip and pipe stars onto each jello shot. If no piping bag, use a spoon to dollop.
- Return jello shots to the fridge for 30 minutes to let whipped cream firm slightly before serving.
