  • 1 package (3 oz / 85 g) cherry-flavored gelatin powder
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 1/2 cup (120 ml) vodka or flavored liquor of choice
  • 1 tablespoon fresh lime juice
  • 12 tablespoons sugar (optional)
  • 1 cup (240 ml) heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, pour 1 cup boiling water over the cherry gelatin powder. Whisk until completely dissolved (about 1-2 minutes).
  2. Stir in 1/2 cup cold water, 1/2 cup vodka, and 1 tablespoon fresh lime juice. Add 1-2 tablespoons sugar if desired and whisk until dissolved.
  3. Carefully spoon or pour the mixture into small shot glasses or silicone molds, filling each about 3/4 full. Place on a tray to avoid spills.
  4. Refrigerate for at least 3-4 hours or until fully set. Alternatively, chill in the freezer for about 2.5 hours to speed up setting, watching to prevent freezing solid.
  5. Chill mixing bowl and beaters for 10-15 minutes. Pour cold heavy cream, powdered sugar, and vanilla extract into the bowl.
  6. Beat on medium-high speed until soft peaks form, about 3-4 minutes. Avoid over-whipping.
  7. Transfer whipped cream to a piping bag fitted with a star tip and pipe stars onto each jello shot. If no piping bag, use a spoon to dollop.
  8. Return jello shots to the fridge for 30 minutes to let whipped cream firm slightly before serving.

Notes

Use boiling water to fully dissolve gelatin to avoid grainy texture. Keep whipping cream and utensils cold for best results. Avoid over-whipping cream to prevent turning it into butter. Chill jello fully before adding whipped cream to prevent melting. Shots keep well for 2-3 days in the fridge; avoid freezing.
