  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup raw honey (unfiltered preferred)
  • 2 tablespoons hot sauce (smoky chipotle or cayenne-based recommended)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 teaspoon chili flakes (optional)
  • Freshly ground black pepper to taste
  • 810 wooden or metal skewers (if wooden, soak in water for 30 minutes)

Instructions

  1. Trim the chicken thighs and cut into 1-inch chunks, keeping pieces roughly the same size for even cooking.
  2. In a large bowl, whisk together olive oil, lime juice, garlic powder, chili flakes, salt, and black pepper. Toss chicken pieces in the marinade until well coated. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  3. While chicken marinates, combine honey, hot sauce, apple cider vinegar, and smoked paprika in a small saucepan. Warm over medium-low heat, stirring occasionally until honey is melted and mixture is blended (3-5 minutes). Keep warm without boiling.
  4. Remove chicken from marinade and thread pieces onto soaked wooden or metal skewers, leaving space between pieces.
  5. Preheat grill to medium-high heat (about 400°F). If using charcoal, wait until coals have light gray ash coating.
  6. Grill skewers for 4-5 minutes per side, turning carefully with tongs. During the last 2 minutes, brush hot honey glaze onto chicken, flipping and glazing to build sticky coating. Adjust heat to prevent burning.
  7. Check doneness: chicken should reach internal temperature of 165°F. Pieces should be charred on edges but juicy inside.
  8. Remove skewers from grill and let rest for a few minutes before serving.

Notes

Keep the honey glaze off the chicken until the last few minutes on the grill to prevent burning. Soak wooden skewers in water for at least 30 minutes before grilling to avoid charring. Rest skewers after grilling to keep meat juicy. For extra caramelization, broil briefly after grilling but watch carefully to avoid burning.
