Ingredients

  • Baguette or rustic Italian bread, sliced into ½-inch rounds
  • Extra-virgin olive oil, for brushing
  • Garlic cloves, halved, for rubbing on toasted bread
  • Roma tomatoes, diced
  • Fresh basil leaves, finely chopped
  • Red onion, finely minced (optional)
  • Salt and freshly ground black pepper, to taste
  • Red wine vinegar or balsamic glaze, a splash
  • Small-curd cottage cheese, drained
  • Fresh chives and parsley, finely chopped
  • Fresh lemon juice, a squeeze
  • Roasted red peppers, diced
  • Kalamata olives, chopped
  • Capers, rinsed and chopped
  • Fresh oregano or dried, a pinch
  • Olive oil, to bind
  • Ripe avocado, mashed
  • Crumbled feta cheese
  • Fresh dill or cilantro, chopped
  • Fresh lime juice, a splash

Instructions

  1. Preheat oven to 400°F (200°C). Slice baguette into ½-inch rounds. Arrange slices on a baking sheet in a single layer. Brush each slice lightly with olive oil.
  2. Toast bread in oven for 8-10 minutes or until golden and crisp. Remove and immediately rub each slice with cut side of a garlic clove. Set aside to cool slightly.
  3. Make classic tomato basil topping: Combine diced Roma tomatoes, chopped basil, finely minced red onion, a splash of red wine vinegar or balsamic glaze, salt, and pepper. Stir gently and let sit for 10 minutes.
  4. Whip cottage cheese topping: Drain cottage cheese thoroughly. In a food processor, combine cottage cheese, chopped chives, parsley, lemon juice, salt, and pepper. Pulse until smooth and creamy, about 30 seconds. Chill until ready to serve.
  5. Prepare roasted pepper & olive tapenade: Combine diced roasted red peppers, chopped Kalamata olives, capers, oregano, and enough olive oil to bind but keep chunky. Mix well and season with salt if needed.
  6. Make avocado & feta smash: Mash ripe avocado with a fork. Fold in crumbled feta cheese, chopped dill or cilantro, lime juice, salt, and pepper. Adjust seasoning to taste. Cover to prevent browning if prepping early.
  7. Set up bruschetta bar: Arrange toasted bread slices on a large platter or board. Place each topping in its own bowl with small spoons for easy serving. Garnish with fresh basil or parsley sprigs and an extra drizzle of olive oil if desired.
