Sweet, smoky, and tender carrots glazed with brown sugar and smoked to perfection, making a perfect side dish for BBQ or weeknight dinners.

  • 2 pounds fresh whole carrots, peeled and trimmed
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup packed brown sugar
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Peel and trim about 2 pounds of fresh carrots, slicing thicker carrots in half lengthwise for even cooking.
  2. In a mixing bowl, combine melted butter, brown sugar, maple syrup (if using), apple cider vinegar, salt, black pepper, and smoked paprika (if using). Whisk until smooth and glossy.
  3. Add the carrots to the bowl and toss thoroughly to coat every piece with the glaze.
  4. Preheat the smoker to 225°F (107°C) and add your choice of wood chips such as apple or cherry.
  5. Place the glazed carrots in a foil pan or grill basket in a single layer.
  6. Smoke the carrots for about 45 minutes to 1 hour, turning halfway through, until tender with a slight caramelized edge.
  7. In the last 10 minutes, brush on a little extra glaze to boost the sticky, shiny finish.
  8. Check for doneness by piercing with a fork; carrots should be tender but not mushy.
  9. Serve warm immediately for best texture and flavor.

Notes

If glaze thickens or burns, thin with water or extra maple syrup before brushing. Keep smoker temperature steady at 225°F to avoid drying out carrots. For vegan version, substitute butter with coconut oil and brown sugar with pure maple syrup.
