  • 3 tablespoons unflavored gelatin powder (Knox brand preferred)
  • 3/4 cup granulated sugar (or honey/agave syrup as substitute)
  • 1 cup blueberry juice or fresh blueberries pureed (frozen works too)
  • 1 cup raspberry juice or puree (fresh or frozen)
  • 1 cup blackberry juice or puree (optional)
  • 1 cup vodka or berry-flavored liqueur (divided between layers, adjust to taste)
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cups boiling water
  • Optional garnish: fresh berries or edible glitter

Instructions

  1. Sprinkle gelatin powder over 1 cup cold water in a large bowl and let bloom for 5 minutes.
  2. Pour 1 cup boiling water over bloomed gelatin and whisk until completely dissolved.
  3. Divide gelatin mixture evenly into three separate bowls (about 1 cup each).
  4. To the first bowl, add 1/3 cup blueberry juice, 1/3 cup vodka, and 2 teaspoons sugar; stir to combine.
  5. Pour the blueberry mixture into shot glasses or molds, filling about one-third of each. Refrigerate for 30-45 minutes until firm but tacky.
  6. In the second bowl, mix 1/3 cup raspberry juice, 1/3 cup vodka, and 2 teaspoons sugar; stir until smooth.
  7. Gently pour raspberry mixture over the first layer using the back of a spoon. Refrigerate for 30-45 minutes.
  8. In the third bowl, add 1/3 cup blackberry juice, 1/3 cup vodka, and 2 teaspoons sugar; stir well.
  9. Pour blackberry mixture over the second layer gently and refrigerate for at least 2 hours until fully set.
  10. Before serving, garnish each jello shot with fresh berries or edible glitter.

Notes

Do not rush chilling between layers to prevent colors from bleeding. Use the back of a spoon to pour layers gently. Keep molds level in the fridge to avoid slanted layers. Room temperature juices prevent premature setting. Optional to substitute vodka with sparkling water or berry soda for non-alcoholic version. Store covered in fridge up to 3 days; avoid freezing.
