A quick, improvisational charcuterie board designed for two people, using simple pantry staples like crackers, cheese, nuts, and fruit to create a satisfying and stress-free meal.

Ingredients

Scale
  • 4–6 ounces crackers (water crackers, seeded crackers, or gluten-free rice crackers)
  • 2 ounces hard cheese (cheddar, gouda, or manchego)
  • 2 ounces soft cheese (goat cheese, brie, or camembert)
  • 2–3 ounces cured meat (salami, prosciutto, or ham) – optional
  • 1/4 cup nuts (almonds, walnuts, or pecans)
  • Small handful of dried fruit (apricots, figs, or cranberries)
  • Fresh fruit (grapes or apple slices tossed in lemon juice)
  • Savory crunch (pickles, olives, or whole grain mustard)
  • 2 tablespoons honey or jam

Instructions

  1. Wash fresh fruit; slice apples or pears and toss with lemon juice to prevent browning. Pat cheese dry if needed.
  2. Place crackers on the board in stacks or fanned out, leaving space between them.
  3. Add small bowls or dishes for nuts, olives, or dips in different corners of the board.
  4. Cut hard cheese into cubes or thin slices and arrange in a line or cluster.
  5. Place soft cheese near the hard cheese, either whole with a knife or sliced into rounds.
  6. Fold meat loosely and scatter dried fruit, fresh fruit, and nuts around the board to fill gaps.
  7. Drizzle honey over the soft cheese or fruit.
  8. Add a sprig of rosemary or thyme for garnish and serve immediately.

Notes

Let cheese come to room temperature 30 minutes before serving for better flavor and texture. Use wax paper to store leftover cheese. Keep crackers in an airtight container to maintain crispness. Store fruit separately to prevent moisture transfer.
