  • 810 slices deli turkey breast
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ½ cup fresh spinach leaves
  • Salt and black pepper to taste

Instructions

  1. Soften the cream cheese: Take your cream cheese out of the fridge about 20 minutes before you start. You want it soft enough to spread like butter, not cold and stiff. If you’re in a hurry, microwave it for 10-15 seconds—but watch it carefully.
  2. Prep your ingredients: Lay out your tortillas on a clean work surface. Pat the turkey slices dry with a paper towel. Make sure your spinach leaves are completely dry too.
  3. Spread the cream cheese: Using your butter knife or spatula, spread a thin, even layer of cream cheese over the entire surface of each tortilla. Leave about a half-inch border around the edges.
  4. Layer the turkey: Place 3-4 slices of turkey over the cream cheese, overlapping them slightly. Cover the whole surface evenly.
  5. Add the cheese and spinach: Sprinkle the shredded cheddar evenly over the turkey. Then add a layer of spinach leaves. Press them down gently so they stick to the cream cheese.
  6. Roll it up tight: Starting from one edge, roll the tortilla tightly. Use your fingers to keep the filling tucked in as you go. Once it’s fully rolled, place it seam-side down.
  7. Wrap and chill: Wrap each roll tightly in plastic wrap. Twist the ends like a candy wrapper to keep it secure. Pop them in the fridge for at least 30 minutes (60 is better).
  8. Slice and serve: Unwrap the rolls and place them on a cutting board. Using a sharp knife, slice off the ragged ends. Then slice the rest into 1-inch pieces. Use a gentle sawing motion. You should get about 6-8 pinwheels per tortilla.

Notes

Pat all ingredients dry to prevent sogginess. Don’t overfill. Chill time is crucial for clean slicing. Use a serrated knife for best results. Make extra for yourself—they disappear fast.
