Quick, simple, and nourishing pinwheel wraps combining creamy avocado, lean turkey, and fresh spinach, perfect for healthy lunchboxes and busy days.

  • 4 large flour tortillas (10-inch, soft and fresh; Mission brand works great)
  • 8 ounces thinly sliced deli turkey breast (low-sodium, nitrate-free preferred)
  • 1 ripe avocado, mashed
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons plain Greek yogurt or dairy-free alternative
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper, to taste
  • 1 cup fresh baby spinach leaves, washed and dried
  • ½ cup shredded carrots (optional)

Instructions

  1. Mash the avocado in a mixing bowl with a fork or potato masher until mostly smooth but still a bit chunky.
  2. Add lemon juice, Greek yogurt, Dijon mustard, salt, and pepper to the avocado and stir until creamy and spreadable.
  3. Lay out the flour tortillas flat on a clean surface or cutting board. Warm for about 10 seconds in the microwave wrapped in a damp paper towel if stiff.
  4. Spread a thin layer of the avocado mixture evenly over each tortilla, leaving about a half-inch border around the edges.
  5. Arrange turkey slices evenly over the avocado spread, then layer with fresh spinach leaves and shredded carrots.
  6. Roll each tortilla tightly but gently from one edge to form a log.
  7. Wrap each roll tightly in plastic wrap or parchment paper to keep them together.
  8. Optional: Chill the wrapped pinwheels in the fridge for at least 10 minutes to firm up the filling.
  9. Unwrap and slice each roll into 1-inch pinwheels using a sharp knife.
  10. Pack and serve cold or at room temperature.

Notes

Mash avocado with lemon juice to prevent browning. Warm tortillas briefly to make rolling easier. Chill wrapped pinwheels before slicing for best results. Use a serrated knife to slice neatly. Variations include swapping turkey for grilled tofu or roast beef, adding spicy mayo, or using gluten-free tortillas or lettuce wraps.
